Valentine's Day Cake ♥


For Valentine's day, I thought I'd be nice to make a cute cake for someone special or better yet make it with them! Here are just a few steps to make a super sweet red velvet cake  ♥



Here's what you'll need:

♥2 3/4 cups plus 1 tablespoon sifted cake flour or 2 1/2 cups sifted all-purpose flour, plus more for coating the pans
♥2 teaspoons fine salt
♥2 teaspoons baking powder
♥1/4 teaspoon baking soda
♥1/4 cup natural unsweetened cocoa powder
♥2 tablespoons (1 [1-ounce] bottle) red food coloring
♥1 1/2 tablespoons water
♥2 sticks (8 ounces) unsalted butter, at room temperature, plus more for coating the pans
♥2 cups granulated sugar
♥3 large eggs, at room temperature
♥1 1/2 teaspoons vanilla extract
♥1 tablespoon finely grated orange zest (from 1 to 2 oranges; optional)
♥1 cup whole or low-fat buttermilk


For the icing:

♥1 1/2 sticks (6 ounces) unsalted butter, at room temperature

♥1 pound cream cheese, at room temperature

♥1 pound (4 cups) sifted powdered sugar

♥2 tablespoons whole milk, if needed




To make the cake:

♥Heat the oven to 350°F. Coat 2 (9-inch) round cake pans generously with butter, then flour, tapping out any excess flour; set aside.

♥Sift the measured flour, salt, baking powder, and baking soda together twice; set aside. Whisk the cocoa, food coloring, and water in a small bowl until smooth; set aside.

♥Beat the measured butter in a large bowl using an electric mixer (or in the bowl of a stand mixer fitted with a paddle attachment) on medium speed until creamy, about 30 seconds. Add the sugar, 1/4 cup at a time, beating about 15 seconds after each addition and scraping down the sides of the bowl as necessary, until the mixture has lightened in color and become fluffy, about 2 minutes. Add the eggs one at a time, the vanilla, and the orange zest (if using), beating 15 seconds after each addition. Scrape down the sides of the bowl. Add the red cocoa mixture and mix until evenly incorporated.

♥On low speed, alternately add the flour mixture and the buttermilk, starting and ending with the flour mixture, until just incorporated. Once all the ingredients are incorporated, beat the batter 10 to 12 strokes with a spoon or spatula if using cake flour, 2 to 3 strokes if using all-purpose flour. (Do not overwork the batter, as this will make the cake tough.)

♥Divide the batter between the cake pans and spread the tops evenly with the spoon or spatula. Bake until a cake tester or toothpick inserted into the center comes out clean, about 30 minutes. Remove from the oven and let the cakes cool in their pans on a rack for 10 minutes. Slide a thin paring knife around the edges and invert the cakes onto the rack to cool completely, at least 1 hour.



For the icing:

♥Beat the butter in a large bowl using an electric mixer (or in the bowl of a stand mixer fitted with a paddle attachment) on medium-high speed until creamy, about 30 seconds. Add the cream cheese and continue to beat on medium-high speed until the mixture is fluffy, white, and very smooth, about 1 minute. Reduce the speed to low and add the powdered sugar 1 cup at a time, beating for 30 seconds after each addition, until the mixture is creamy, fluffy, and smooth. If the frosting is too stiff, beat the milk into it to loosen it.


To put it all together:

♥Transfer 1 of the cake layers, bottom side up, to a serving plate or cake stand. Spoon 1 cup of the icing into the center of the cake layer. Work an icing or rubber spatula in a gentle swirling motion and spread the icing from the center toward the edges of the cake in an even layer (if you need to add more icing, add it to the center and work it out toward the sides).

♥Carefully set the second cake layer on top of the first and ice the second layer in the same manner, beginning with a dollop in the center and working it out toward the sides. Then ice the sides of the cake. (If the sides are crumbly, brush any excess crumbs away and place a thin layer of icing on the cake to seal the crumbs in. Refrigerate for 30 minutes, then apply another, thicker layer of icing on top of the first.)

♥Store the cake at room temperature beneath a cake cover. If you don’t plan to eat it within 24 hours, tent it with plastic wrap and store it in the refrigerator for up to 3 days. Remember to remove the cake from the refrigerator an hour or more before serving to take the chill off. Serve with glasses of cold milk.

♥Cut the cake into the shape of a heart for more of a valentine's day vibe!

December Favorites ♥

Okay so I know it's not December anymore, but I figured I'd still share my December Favorites with you!! These are just some things I could not get enough of last month. Since I started my blog in the middle of December, I would like to keep posting these monthly favorites and just share some of the things that I loved!
Not all these things are related to beauty or lifestyle some of these things are just nice little things that I found interesting or cool.

"Kawaii" Girls ♥



Ok, so the term "kawaii" has gotten very popular recently. And from what I've seen, a lot of people have negative things to say about it.

What does "kawaii" mean anyway? Kawaii is the japanese word for cute. And the style that's connected to this term varies. It's basically just a love for super cute, girly, frilly, pastel things or anything anybody deems cute. "Kawaii" is also associated with a love for japanese things. May it be anime, food, anything.

Now, why is this term greeted with such negativity? I see girls expressing themselves and their love for anything even remotely "kawaii" with backlash. The biggest argument I keep seeing is

"Why don't these people grow up?"

"Do you think you were born in Japan?"

"Kawaii girls are scary"

"You're not Japanese" 

"YOU'RE NOT JAPANESE"

 No. Nonononononono. 

"Kawaii", or any style for that matter, is still a style. It's not up to you to decide if someone shouldn't dress or like what they want. And news flash...

GIRLS DO NOT DRESS UP FOR ANYBODY BUT OURSELVES. NOT EVERYTHING WE DO IS FOR OUTSIDE ATTENTION. 

You don't get decide who's a fan of what and what they have to do, or know in order to be a fan and dress how they want. If people enjoy and express themselves in ways you don't approve of, you do not have a say in what people can love and how they dress.

Whether it's positive or negative, our looks does not equal to our success in life or our worth. How people dress is not the determining factor in the kind of person someone can be. 

Girls do not fake "being japanese" for attention. And how is that even a valid point? "You're not japanese." Obviously not all girls who revel in japanese products and japanese fashion are not all japanese. And how is that a bad thing? Are you saying that someone cannot like a certain thing because of their race? Are you serious? I'm not kidding, I've actually seen people say these things. Why is race even an issue? If ANYBODY wants to like ANYTHING, LET THEM! Just because it doesn't go according to things and styles that YOU like, it doesn't mean that you have to hate on them. 

It's people who hate on this or any sub culture that make it impossible for people to be themselves. Stop shaming girls and anybody for liking the things they like because again,

THEY DONT DO IT FOR YOU OR ANYONE ELSE.

Don't be ashamed to express yourself publicly in any way you chose. If you wanna dress in Lolita, go ahead! If you want to blast K-Pop with the windows down, turn it up! If you want to tweet, write about, or post about the anime you've been watching, go on! Don't be afraid of those closed minded, rude people. Be yourself and be happy!

Dealing With Stress ♥




So what ARE the effects of stress anyway? 

Is there anything you can do about stress?

Of course you can! The good news is you can learn to take control of your stress.
Here are somethings you can try!
♥ Figure out what exactly is stressing you out.
♥ Try to find a way to reduce your stress.
♥ Learn HEALTHY ways to combat stress!


What can you do to avoid stress?



Stress is what you feel when you bite off more than you can chew. Stress makes hormones that speed up your heart, make you breathe faster, and give you a burst of energy. 
Some stress is totally normal and sometimes even good. Stress can help you meet a deadline or study hard for an exam!
But if you experience stress regularly, your body could start reacting negatively. It can cause horrible headaches, stomach cramps, back aches, and it can be harder to get a good night's sleep. It can make one's immune system weak and make it harder for one to fight off illness. 
Stress is a daily thing for some people and even if you can't get rid of it completely, you can do things to lower your stress levels.

Some more tips!

♥ Take care of your body! Sleep often and eat well. Smoking and excessive drinking increases stress!
♥ Sometimes stress happens when you do more than you can handle. Learning to say "no" to people will help get over that.
♥ Don't be afraid to ask for help! People who care about you will help you and wouldn't want you to be stressed all the time. Sometimes you need outside help, and that's fine. Talk to a parent or trusted adult, having stress is nothing to be ashamed of!
